Time: 20 minutes
Ingredients:
4 chicken breasts, grilled
1/4 cup chopped onion
1 avocado, chopped
1 Tbs. lemon juice
2 hard boiled eggs, diced
Salt and pepper to taste
Directions:
- Chop the chicken breast with a food processor
- Mix all of the ingredients by hand.
- Spread over pita chips or whole grain crackers
Grapes and green onions make a delicious garnish option!
