Healthy Chicken Salad

Sports Performance Director Erik Knowles shares his personal chicken salad recipe that’s a quick and healthy option for you and your family.

Yield: 4 servings
Time: 20 minutes

Ingredients:
4 chicken breasts, grilled
1/4 cup chopped onion

1 avocado, chopped
1 Tbs. lemon juice
2 hard boiled eggs, diced
Salt and pepper to taste

Directions:

  1. Chop the chicken breast with a food processor
  2. Mix all of the ingredients by hand.
  3. Spread over pita chips or whole grain crackers

Grapes and green onions make a delicious garnish option!
